Mr. Rawles. Given the recent discussion about canning it seems desire sealed tin cans would make an effective Electromagnetic Pulse () barrier. Why not can some inexpensive radios small transistor radios and other electronic items in a standard soup-size can? Can some lithium batteries and you'll be all set. By the way it would probably be a good idea to make sure that the lid and can have good electrical contact. Some cans might be lacquered/coated so it might be wise to check the lid/can continuity with an Ohm meter. Regards. - JN-EMT JWR Replies: That is a great idea. Congrats! "Canning Homemade Salsa Recipes Requires Special Care!" posted by ~Ray
Posted on 2008-10-12 22:46:14

When canning salsa recipes you need to take extra care -it can definitely pose a health risk if not done properly. The bacteria which may result from improperly canned food produces a deadly toxin that can cause severe damage to the central nervous system (and in the worst case death) when consumed in even small amounts. Since most salsa recipes contain a mixture of low-acid foods such as onions and chiles an acid such as lemon juice or vinegar must be added to prevent the growth of this bacteria. Special care must be taken to ensure that they contain enough of this acid to be processed safely in a boiling water canner. When following canned salsa recipe instructions make sure to follow them exactly. Use the amounts of each vegetable listed in the recipe and add the amount of vinegar or lemon juice listed. Do not can salsas that do not follow these or other research tested recipes. Remember that you always have the option of freezing or refrigerating the salsa. Do not thicken salsas with flour or cornstarch before canning. After you open a jar to use you may pour off some of the liquid or thicken with cornstarch. Make sure you follow manufacturer's directions for pretreating the jar lids. When canning your salsa fill the hot clean jars with the hot salsa. Be very careful not to leave any of the salsa on the rims. Wipe the rims of the jars with a clean damp paper towel. Put on lids and screw on metal bands. When processing in a boiling water canner use a rack to keep jars from touching the canner bottom and to allow the heat to reach all sides of the filled jars. Put the jars into a canner that contains simmering water. Add the boiling water if needed to bring water 1-2 inches above the top of the jars. Don't pour the water directly on the jars. Place a tight-fitting cover on canner. Bring water back to a rolling boil and set a timer for recommended processing time. Make sure the water is boiling gently and steadily. Remove the jars from the canner immediately after timer sounds. If the jars are left in the water too long the food could spoil. If you find that a jar is not sealed refrigerate it and use it soon after that. When storing wipe the jars and label them with the date and the contents of the jar. Store the salsa jars in a cool dark place and use it within a year. When you are ready to try your homemade salsa recipe before opening each jar look for any bulging lids leaks or any unusual appearance of the food. If you notice an odor mold foam or anything that might make you suspicious destroy the salsa food. As you can see you need to take great care when canning salsa to ensure that the quality of the food is maintained. But the results are worth the effort!

"Canning, Canning, Canning" posted by ~Ray
Posted on 2008-03-26 06:18:32

CJ and I took a few days off to get the house in order so in addition to painting. I've done some more canning. Today. I made some Beer Mustard. Take a bottle of beer. Add a case of cook mustard seeds. Bring them to a boil and let sit for a couple hours. Then you put them in the food processor. It is supposed to end up the mustard seeds. It didn't and I don't undergo a mortar and pestle. I think this may be a problem. Put it all approve in the pot and add some seasoning vinegar and cook down for awhile. Then of cover jar. Quite honestly it tasted disgusting going into the jars. I'm afraid it is going to be just as bad coming out. Oh and the cranberry mustard I made same problems it ordain probably all be thrown away. I did alter some tasty cranberries a couple days ago. And I mixed up some muffins today for dessert. Num. Carrot pumpkin muffins. Hmmm. I'm not sure. I desire Mexican for groups. Maybe a ceviche alter your own tacos and beans. Margaritas and rum and cokes for everyone!Or how about cover mary bar with classic "bar food." You could do chicken wings potato skins and quesadillas. I'm a big fan of keeping it easy and make ahead. Since you won't experience what everyone will desire act it simple and something that can give to vegetarians too. Or Mimosas bread cheeses meats and spreads. My family had this the other day for brunch and it is one of my favorites.

"Overcoming My Fears: Canning" posted by ~Ray
Posted on 2007-12-20 17:29:24

I took a Food & Nutrition course which was a basic course into food sciences and how things come about when cooking & preserving food. One of our class assignments was to can foods. We were given acidic foods and non-acidic foods to can and then the teacher went around to analyse our handiwork. Knowing nothing about canning. I read the instructions and then canned my tomatoes for the class. This recipe is a great one for a first-time canner especially if you use the decrease cooker to make it. There is no processing involved and it yields a great amount for very little effort. The results were delicious! This literally tastes like pumpkin pie smeared all over bread. I am going to make some of my to put this on for dinner one night this week. "Good work on the canning! I've only done it once but I made waaay to much cherry jelly. When my mom got approve in town she mentioned that she wasn't meaning to use the whole tree. I'm currently working on my fear of sewing. After a robe disaster and much procrastination. I finally completed a child's apron which you can see on my blog. Now I've started on a quilt. After one success (and figuring out my sewing machine) I like sewing much more now." "Good for you!My first worry was the freezer. Organizing it what if it dies etc. I am over coming it. We survived a freezer "death" just 2 months ago. Ive just been prepping things while I wait for the kiddos to finish lunch. Doesn't take long. I am also afraid of canning - not so much that it has to be done right but I remember my mom slaving in the kitchen grumping about it the whole time. I may undergo to try it sometime just to see if it was as bad as she made it look." "Megan- The cheapest way to do the canning is to buy the jars at thrift store and then buy new lids and seals for them. If you don't have time to do that. I thought that the Walmart's price was reasonable (1 dozen jelly jars with lids & labels for $7.92) Maybe a more experienced canner might have better pricing info for you. I have also gotten jars for other types of projects from Big Lots. I got my air bubbles out with a rubber spatula. If I was doing it all over again. I would just use a plastic injure and go along the outside with it because the spatula was a mess. I have also read chopsticks work great :)Cold water bath just means a pot full of cold water. Bring it to a hard boil and let them jiggle away in there for ten minutes. Canners feel free to correct me on this :)" "AMY!!!!!!!! Great job - doesn't.
